Island Cookies
- 1 2/3 c. all-purpose flour
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 c. butter or margarine, softened (1 1/2 sticks)
- 3/4 c. packed brown sugar
- 1/3 c. granulated sugar
- 1 tsp. vanilla extract
- 1 egg
- 2 c. milk chocolate chips (11 1/2 oz.)
- 1 c. flaked coconut, toasted if desired
- 3/4 c. Macadamia nuts or walnuts, chopped
- Combine flour, baking powder, baking soda and salt in small bowl.
- Beat butter, brown sugar, granulated sugar and vanilla in large mixing bowl until creamy.
- Beat in egg.
- Gradually blend in flour mixture.
- Stir in morsels, coconut and nuts.
- Drop by slightly rounded tablespoonfuls onto ungreased baking sheets. Bake in preheated 375u0b0 oven for 8 to 11 minutes or until edges are lightly browned.
- Let stand for 2 minutes.
- Remove to wire racks to cool completely.
- Makes about 3 dozen.
