Boston Baked Beans(As They Should Be)

  1. Pick over beans; discard any imperfect ones.
  2. Rinse well; place beans in a bowl.
  3. Cover with cold water.
  4. Soak overnight; drain.
  5. Cover with water; bring to a boil.
  6. Lower heat; simmer until skins split when blown upon.
  7. Drain.
  8. Pour into bean pot. Stir salt, mustard, ginger, molasses, brown sugar and maple syrup together with some boiling water; pour over beans.
  9. Peel and push onion into center of bean pot.
  10. Cube salt pork; place on top of beans.
  11. Add enough hot water to cover beans.
  12. Cover bean pot. Bake for 8 hours in a 250u0b0 oven.
  13. Add hot water (if needed) to keep beans covered.
  14. During the last hour of cooking, remove cover and increase temperature to 300u0b0.
