Kerri'S Pink Tortellini

  1. In saucepan melt butter over medium heat.
  2. Add onion and saute until translucent (about 5 minutes).
  3. In blender puree tomatoes until smooth.
  4. Add pureed tomatoes, basil, salt and pepper to saucepan.
  5. Reduce heat to low; simmer 10 minutes. Whisk in cream. Simmer 5 minutes more.
  6. Meanwhile, cook tortellini according to package directions.
  7. Transfer to a warm serving bowl.
  8. Add sauce, toss well.
  9. Sprinkle with Parmesan cheese.
  10. Makes 4 servings, 560 calories each.
