Kerri'S Pink Tortellini
- 4 Tbsp. butter or margarine
- 1/4 c. finely minced onion
- 1 can (14 oz.) Italian tomatoes, drained and seeded
- 1 Tbsp. chopped fresh basil
- 1/4 tsp. salt
- 3/4 c. heavy or whipped cream
- 1 pkg.(15 oz.) fresh or frozen cheese tortellini
- freshly grated Parmesan cheese
- fresh ground pepper to taste
- In saucepan melt butter over medium heat.
- Add onion and saute until translucent (about 5 minutes).
- In blender puree tomatoes until smooth.
- Add pureed tomatoes, basil, salt and pepper to saucepan.
- Reduce heat to low; simmer 10 minutes. Whisk in cream. Simmer 5 minutes more.
- Meanwhile, cook tortellini according to package directions.
- Transfer to a warm serving bowl.
- Add sauce, toss well.
- Sprinkle with Parmesan cheese.
- Makes 4 servings, 560 calories each.
