Microwave Apple Butter
- 8 c. (9 medium) cored, quartered, peeled apples
- 2 c. apple cider or apple juice
- 1 1/2 c. sugar
- 3/4 tsp. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. allspice
- In 3-quart microwave-safe casserole, combine apples and cider (or apple juice).
- Microwave on High for 12 to 15 minutes or until apples are tender, stirring twice during cooking.
- In food processor bowl with metal blade or blender container, process apple mixture until smooth.
- Return to casserole.
- Add sugar, cinnamon, cloves and allspice; blend well.
- Microwave on High for 25 to 35 minutes or until thickened and dark brown, stirring once halfway through cooking.
- (Mixture will thicken as it cools.)
- Spoon into 4 clean hot 8-ounce jars; screw lids on tightly.
- Store in refrigerator up to 3 weeks or in freezer up to 3 months.
- Makes 4 cups.
