Applesauce Fruit Cake
- 2 eggs
- 1 c. Crisco
- 3 c. flour
- 3 c. applesauce or 1 large can
- 3 tsp. soda
- 1 tsp. allspice
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 c. brown sugar
- 1 c. white sugar
- 1 box raisins
- nuts, as much as desired
- 1 c. crushed pineapple, well drained
- 1 jar maraschino cherries
- 1 box citrus fruit
- Mix sugar, Crisco and eggs together.
- Sift flour, spices and salt.
- Dust raisins and nuts with mixture.
- Heat applesauce with soda and when it bubbles up, fold in with dry ingredients.
- Then mix in pineapple and beat with electric mixer.
- Add other fruits. Bake 1 1/2 hours in tube pan.
- Turn off oven and leave cake in for about 10 minutes.
- Let cool and then remove from pan.
- Freezes very well.
