Hearty Baked Macaroni
- 1 (16 oz.) can tomato puree
- 1 c. water
- 2 tsp. Italian seasoning
- 1 tsp. garlic powder
- 1 1/2 lb. low-fat cottage cheese
- 1/2 tsp. onion powder
- 1 (8 oz.) pkg. elbow macaroni, uncooked
- 4 oz. Mozzarella cheese
- In small bowl, combine water, tomato puree, Italian seasoning and 1/2 of garlic powder.
- In another bowl, combine cottage cheese, onion powder and rest of garlic powder.
- Spray a 9 x 9 x 2-inch casserole dish with cooking spray.
- Spread 1/3 of tomato mix in dish.
- Layer 1/2 of macaroni, all of cheese mixture, and 1/3 of the tomato mix.
- Add rest of macaroni and cover with tomato mix.
- Cover and bake at 350u0b0 for an hour.
- Uncover and top with Mozzarella cheese.
- Bake, uncovered, until cheese melts.
