Banana Bran Muffins

  1. Preheat oven to 400u0b0.
  2. Spray 12 muffin pan cups with nonstick cooking spray.
  3. Mix first 3 ingredients.
  4. In separate bowl, blend egg, milk, margarine and sugar substitute.
  5. Stir in bran cereal. Let stand for 5 minutes.
  6. Mix mashed banana with honey until well mixed.
  7. Add to bran mixture.
  8. Stir in flour mixture just until well blended; do not overmix.
  9. Fill muffin cups 2/3 full.
  10. Bake for 18 to 20 minutes or until toothpick comes out clean.
  11. Let stand for 2 to 3 minutes.
  12. Remove to wire rack to cool.
