Transfer Restaurant'S Holiday Fruit Cake
- 1 1/2 c. shelled walnuts
- 1 1/2 c. shelled pecans
- 1 1/2 c. shelled Brazil nuts
- 1 pkg. (7 1/4 oz.) pitted dates
- 2/3 c. chopped candied orange peel
- 1/2 c. drained red maraschino cherries
- 1/2 c. drained green maraschino cherries
- 1/2 c. seedless raisins or currants
- 3/4 c. sifted flour
- 3/4 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 3 eggs
- 1 Tbsp. rum
- In a
- large
- bowl,
- mix
- nuts
- and
- fruits.
- Mix flour, baking powder, salt and sugar together and add to nut mixture. Mix well to
- coat.
- Beat
- eggs
- well and add rum.
- Add this to coated nut mixture and thoroughly blend together.
- Pour into 2 greased and floured
- bread pans.
- Bake in 300u0b0 oven for 1 1/2 hours.
- Stores well, tightly wrapped and in cool place.
