Raisin Molasses Honeys With Cornflakes
- 1 c. Fruit Cake brand golden seedless raisins
- 1/2 c. butter or butter substitute
- 1/2 c. honey
- 1/4 c. light molasses
- 2 eggs
- 1 tsp. vanilla extract
- 1 1/2 c. sifted all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 5 c. uncrushed cornflakes
- Rinse raisins in hot water; drain and dry on a towel.
- Cream butter or substitute.
- Add honey and molasses; beat well.
- Add beaten egg yolks and flavoring.
- Stir to blend.
- Add flour sifted with baking powder and salt; beat.
- Stir in raisins and cornflakes, alternately with stiffly beaten egg whites.
- Drop by small spoonfuls onto ungreased cookie sheet, about 2-inches apart. Flatten slightly.
- Bake in a moderate oven (375u0b0) for 10 to 12 minutes.
- Makes 4 1/2 to 5 dozen medium-sized cookies.
