Two Potato Soup

  1. Trim leek, cutting off all but 1 inch or so of green.
  2. Rinse leek under running water to remove all sand between leaves, then chop finely.
  3. In 2 1/2 quart microwave-safe bowl, melt butter.
  4. Add leek and cover with vented plastic.
  5. Microwave on High for 3 to 5 minutes until leek is tender.
  6. Stir in broth, both potatoes, pepper and nutmeg.
  7. Cover with vented plastic and microwave on High 15 to 18 minutes or until potatoes are tender.
  8. Transfer to blender. Process until smooth.
  9. Return to bowl and stir in milk.
  10. Cover and microwave on High 1 to 3 minutes.
  11. Stir once until heated.
  12. Can be doubled and done on stove.
  13. Freezes great!!
