Antipasto Party Tray
- 1 medium yellow squash, cut into 1/4-inch slices
- 1 large scraped carrot, cut in 1/4-inch slices
- 1 large green pepper, seeds removed and cut into 1-inch pieces
- 10 ripe olives
- 10 cherry tomatoes
- 10 small whole mushrooms
- 10 oz. Monterey Jack cheese, cut in 1-inch cubes
- 1 Tbsp. olive oil
- 1/4 c. wine vinegar
- 1/4 c. water
- 1 tsp. Italian seasoning
- 1/4 tsp. black pepper
- dash of garlic powder
- Combine olive oil, vinegar, water, Italian seasoning, black pepper and garlic in a glass jar.
- Cover tightly and shake well. Pour mixture over vegetables.
- Cover and marinate in refrigerator for at least 30 minutes.
- Arrange alternately on a serving tray.
