Black Bean Tortilla Casserole

  1. Prepare black beans as directed on package (wash, sort, bring to
  2. boil).
  3. Cook
  4. with
  5. 1/2
  6. onion
  7. and 1/2 green pepper (chopped) in
  8. pot.
  9. Cook
  10. down
  11. then
  12. rinse
  13. beans, set aside. Saute the rest
  14. of
  15. onion and pepper in butter; set aside, mix with the beans.
  16. Layer
  17. tortillas
  18. in
  19. casserole sprayed with Pam. Alternate
  20. tortillas
  21. with
  22. beans, salsa, sour cream and cheese; top
  23. with remaining salsa and cheese.
  24. Bake covered 20 minutes in 375u0b0 oven.
