Black Bean Tortilla Casserole
- 1 lb. black beans
- 1 large jar medium salsa
- 1 small container sour cream
- 1 small pkg. flour tortillas
- 1 1/2 c. shredded Monterey Jack/Colby cheese
- 1 small onion, chopped
- 1 green pepper, chopped
- 2 Tbsp. butter
- Prepare black beans as directed on package (wash, sort, bring to
- boil).
- Cook
- with
- 1/2
- onion
- and 1/2 green pepper (chopped) in
- pot.
- Cook
- down
- then
- rinse
- beans, set aside. Saute the rest
- of
- onion and pepper in butter; set aside, mix with the beans.
- Layer
- tortillas
- in
- casserole sprayed with Pam. Alternate
- tortillas
- with
- beans, salsa, sour cream and cheese; top
- with remaining salsa and cheese.
- Bake covered 20 minutes in 375u0b0 oven.
