Chicken Broccoli Casserole
- 5 whole chicken breasts
- 2 pkg. frozen broccoli (1 large head)
- 2 cans cream of mushroom soup
- 1 c. mayonnaise
- 1 c. shredded Cheddar cheese
- 1 c. buttered bread crumbs
- 1 tsp. lemon juice
- Boil chicken 45 minutes.
- When done, remove skin and bones. Break chicken into small pieces. Boil broccoli until near done (10 to 15 minutes).
- Arrange chicken in layers in 3-quart casserole dish. Break off broccoli pieces and cover chicken to make second layer.
- Next use 3/4 of the cheese to make third layer.
- Next mix mushroom soup (no water), mayonnaise and lemon juice together. Blend well.
- Pour over the mixture.
- Add buttered bread crumbs to cover top and sprinkle balance of cheese.
- Bake in a 350u0b0 oven for 45 minutes.
