Snowball Cake
- 2 envelopes unflavored gelatin
- 4 Tbsp. cold water
- 1 c. boiling water
- 1 c. sugar
- 2 Tbsp. lemon juice
- 1 (No. 2) can crushed pineapple
- 4 envelopes Dream Whip
- 1 large angel food cake
- 1 box shredded coconut
- large maraschino cherries, chopped
- Soften gelatin in cold water; add boiling water and stir until dissolved.
- Add sugar, lemon juice and pineapple, including juice. Chill until partially firm.
- Whip 2 envelopes Dream Whip according to directions on box.
- Fold into gelatin mix.
- Cut or break cake in small pieces.
- Arrange alternate layers of cake and gelatin mixture in pan until all is used.
- Chill overnight.
- Next morning, prepare remaining 2 packages of Dream Whip.
- Spread over cake.
- Garnish with coconut and cherries.
- Refrigerate until just before serving.
