One Step Microwave Lasagna
- 1 lb. ground chuck
- 1/2 c. water
- 1 tsp. salt
- 2 c. drained Ricotta cheese
- 1/2 c. grated Parmesan cheese
- parsley
- 2 (15 1/2 oz.) jars meatless spaghetti sauce
- 8 oz. uncooked lasagna noodles
- 3 c. shredded Mozzarella cheese
- 1/2 c. Romano cheese
- Cook beef until brown and drain well.
- Stir in spaghetti sauce, water and salt, blending well.
- Arrange 1/3 of sauce in 8 x 12-inch microwave baking dish.
- Cover with half the uncooked noodles. Spread with 1 cup Ricotta (mixed with chopped parsley, if desired), sprinkle with half the remaining cheeses.
- Repeat with second layer and top with remaining 1/3 sauce.
- Sprinkle with additional Parmesan cheese.
- Cover with double thickness of plastic wrap.
- Cook on Medium (50% power) for 30 to 35 minutes. Sprinkle top with additional Mozzarella and Parmesan cheese.
- Cook on medium about 2 minutes or until cheeses melt.
- Sprinkle with parsley and serve.
- Yields 8 servings.
