Meatless Shepherd'S Pie
- 3 c. frozen peas and carrots, thawed
- 1 c. frozen chopped onion, thawed
- 1 c. frozen chopped green pepper, thawed
- 2 tsp. dried thyme
- 2 tsp. sweet Hungarian paprika
- olive oil flavored vegetable cooking spray
- 4 c. frozen hash browns, thawed
- 2/3 c. lite Ricotta cheese
- 1/4 tsp. salt
- 2 c. drained canned black-eyed peas
- 1 c. diced tomato
- 1 (8 oz.) can no-salt-added tomato sauce
- 2 tsp. low-sodium Worcestershire sauce
- 1/4 tsp. salt
- sweet Hungarian paprika
- Combine first 5 ingredients; stir well.
- Spoon into a 15 x 10 x 1-inch jellyroll pan coated with cooking spray; coat vegetables with cooking spray.
- Bake, uncovered, at 400u0b0 for 20 minutes, stirring after 10 minutes; set aside.
