Meatless Shepherd'S Pie

• 3 c. frozen peas and carrots, thawed
• 1 c. frozen chopped onion, thawed
• 1 c. frozen chopped green pepper, thawed
• 2 tsp. dried thyme
• 2 tsp. sweet Hungarian paprika
• olive oil flavored vegetable cooking spray
• 4 c. frozen hash browns, thawed
• 2/3 c. lite Ricotta cheese
• 1/4 tsp. salt
• 2 c. drained canned black-eyed peas
• 1 c. diced tomato
• 1 (8 oz.) can no-salt-added tomato sauce
• 2 tsp. low-sodium Worcestershire sauce
• 1/4 tsp. salt
• sweet Hungarian paprika

1. Combine first 5 ingredients; stir well.
2. Spoon into a 15 x 10 x 1-inch jellyroll pan coated with cooking spray; coat vegetables with cooking spray.
3. Bake, uncovered, at 400u0b0 for 20 minutes, stirring after 10 minutes; set aside.
