German Potato Salad
- 7 medium-size red potatoes (about 2 pounds)
- 1/4 c. boiling water
- 3 Tbsp. salad vinegar
- 1/4 tsp. salt
- 3 slices bacon, cooked and crumbled
- 1/2 c. chopped onion
- 2 Tbsp. chicken flavored bouillon granules
- 1 Tbsp. vegetable oil
- 1/4 tsp. pepper
- Cook potatoes in boiling water to cover 25 minutes or until tender.
- Drain and cool slightly.
- Peel potatoes and cut into 1/4-inch slices.
- Combine potatoes and onion in a large bowl; set aside.
- Dissolve bouillon granules in boiling water; stir in vinegar (I use red wine vinegar), oil (I use olive oil), salt and pepper.
- Pour over potato mixture and toss gently.
- Keep potato slices separated as you are tossing so that each slice will be coated with oil and vinegar mixture.
- Sprinkle top with crumbled bacon.
- Makes 8 servings.
- This is easy and delicious.
