Country Captain Chicken

  1. Cut up and brown chicken in fat and put aside.
  2. Using a clean pan, brown onions, pepper and garlic in bread.
  3. Add tomatoes and seasonings; cook for 10 minutes.
  4. Place chicken in casserole and pour in sauce, adding fat in which chicken was browned.
  5. Cover with brown paper and lid; bake in a 350u0b0 oven for 45 minutes. When ready to serve, add blanched and browned almonds and well-washed currants.
  6. Serve with rice.
  7. Serves 4 or 5.
