Country Captain Chicken
- 2 1/2 or 3 lb. chicken
- 2 Tbsp. fat
- 2 Tbsp. Crisco
- 1 onion, sliced thin
- 1 green pepper, sliced
- 1 or 2 garlic gloves, chopped
- 2 cans tomatoes
- 1 1/2 tsp. salt
- 1 tsp. white pepper
- 1 1/2 tsp. curry powder
- 1 1/2 tsp. powdered thyme
- 1/4 c. almonds
- 1 Tbsp. currants
- 1 1/2 tsp. chopped parsley
- Cut up and brown chicken in fat and put aside.
- Using a clean pan, brown onions, pepper and garlic in bread.
- Add tomatoes and seasonings; cook for 10 minutes.
- Place chicken in casserole and pour in sauce, adding fat in which chicken was browned.
- Cover with brown paper and lid; bake in a 350u0b0 oven for 45 minutes. When ready to serve, add blanched and browned almonds and well-washed currants.
- Serve with rice.
- Serves 4 or 5.
