Chicken Chow Mein
- 1/4 c. butter or shortening
- 1 c. onions, cut fine
- 1/8 tsp. pepper
- 1 c. hot water
- 1/3 c. cold water
- 2 tsp. La Choy sauce
- 1 1/2 c. diced chicken
- 1 tsp. salt
- 1 c. celery, cut fine
- 1 can bean sprouts, drained
- 2 Tbsp. cornstarch
- 1 tsp. sugar
- Melt butter or vegetable oil in hot skillet.
- Add meat and stir.
- Sear quickly (without browning or burning).
- Add onions and fry for 5 minutes.
- Add celery, salt, pepper and hot water.
- Cover and cook 5 minutes.
- Add drained bean sprouts.
- Mix thoroughly. Heat to boiling point.
- Add flavoring and thickening ingredients. Stir lightly and cook 5 minutes.
- Serve piping hot with chow mein noodles or cooked rice.
- Serves 2.
