Cucumber Relish

  1. Use a coarse grader or grinder for vegetables.
  2. Combine all vegetables in large pan.
  3. Sprinkle with salt; cover with cold water.
  4. Let stand 4 hours.
  5. Drain thoroughly in colander.
  6. Press out all excess liquid.
  7. Combine sugar, vinegar and seed.
  8. Bring to a boil and stir until sugar is dissolved.
  9. Stir in drained vegetables and let simmer 10 minutes.
  10. Pack in hot jars.
  11. Yield:
  12. 6 pints.
