Chicken Enchiladas(Serves 4)
- 2 to 3 green onions, chopped
- 3 chicken breasts, boned and chopped
- 2 c. sour cream
- 1 tsp. chili powder
- 1 jar picante sauce or salsa
- 1/2 tsp. garlic salt
- 4 oz. can green chilies, drained and chopped
- 1 c. grated cheese
- 6 flour tortillas (8-inch)
- 4 oz. sliced mushrooms
- Saute onions until limp; add chicken, green chilies, mushrooms, chili powder, garlic salt, 1 cup sour cream and picante sauce.
- Put a good amount in center of tortillas and roll up the long way. Place 1/2 cup sour cream on bottom of baking dish.
- Place flour tortillas in dish and top with remaining 1/2 cup sour cream and grated cheese.
- Bake at 350u0b0 for 20 to 30 minutes, until heated through.
