Creole Muffins
- 1 1/4 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 4 Tbsp. sugar
- 1 1/4 c. corn meal
- 3 eggs, beaten
- 3/4 c. milk
- 1 c. water
- 1/2 c. oil
- 1 1/2 tsp. butter
- 1/2 c. bell pepper, chopped
- 1 Tbsp. hot pepper, chopped
- 2 Tbsp. onion, grated
- 1 small jar pimiento, chopped
- 2 c. grated Cheddar cheese
- Sift flour, baking powder, salt, sugar and corn meal together. Combine eggs and milk and add to dry ingredients, stirring only enough to moisten.
- Add oil, butter, peppers, onion, pimiento and cheese.
- Combine, stirring only enough to moisten.
- Do not overstir.
- Place in greased muffin tins. Bake at 400u0b0 for 20 to 25 minutes.
- Makes 3 1/2 to 4 dozen.
