Chocolate Chip Brownie Cookies

  1. Preheat oven to 350 degrees Fahrenheit. Line 4 large baking sheets with parchment paper; set aside.
  2. Melt 8 ounces chocolate in a double-boiler or in the microwave until smooth.
  3. In a separate bowl, sift the flour, cocoa, baking powder and salt.
  4. In a large bowl, beat butter, brown sugar and white sugar until light and fluffy. Add eggs, one at a time, then stir in coffee granules and vanilla extract until well-blended. Stir in melted chocolate until completely mixed inches Add flour mixture and stir until just combined. Fold in 1 cup semisweet chocolate chips.
  5. Drop by tablespoonfuls 2 inches apart onto prepared baking sheets.
  6. Bake at 350 degrees Fahrenheit for 10-12 minutes, rotating pans after 5-6 minutes. Bake until edges are set but edges are still very soft.
  7. Remove pans from oven to wire racks to cool for 2 minutes. Carefully slide parchment paper onto wire racks to cool.
