Marinated Shrimp And Cucumber
- 1 tsp. basil
- 1 tsp. oregano
- 1 Tbsp. olive oil
- 3 lb. shrimp
- 2 cucumbers, sliced
- 1 purple onion
- 1 c. red wine vinegar
- 2 c. vegetable oil
- 1 tsp. coriander
- 1 tsp. black pepper
- 1 tsp. red pepper flakes
- 1 tsp. sugar
- 2 or 3 cloves garlic, crushed
- 1 (3 oz.) jar capers, drained
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. lemon juice
- Combine first three ingredients and set aside.
- Cook, peel and devein shrimp.
- Mix shrimp, cucumbers and onion with olive oil mixture.
- Bring to boil the next seven ingredients and simmer 3 minutes.
- Cool.
- Pour the herb mixture over the shrimp and stir. Pour capers, Worcestershire sauce and lemon juice over mixture. Chill 8 hours, stirring once or twice.
