Glazed Fresh Apple Cookies
- 2 c. sifted all-purpose flour
- 1/2 c. soft shortening
- 1/2 tsp. salt
- 1 tsp. ground cloves
- 1 egg (unbeaten)
- 1 c. finely chopped, unpared apple
- 1/4 c. apple juice or milk
- 1 tsp. baking soda
- 1 1/2 c. brown sugar, packed
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 c. chopped nuts
- 1 c. dark or light raisins, chopped
- Start heating oven to 400u0b0.
- Sift the flour with baking soda. Mix
- shortening,
- brown
- sugar, salt, cinnamon, cloves, nutmeg and
- egg
- until
- well
- blended.
- Stir in half of flour mixture, then nuts, apple and raisins.
- Blend in apple juice, then remaining flour mixture.
- Onto greased cookie sheet, drop rounded tablespoonfuls of dough 2 inches apart.
- Bake 11 to 14 minutes
- or until
- done.
- While cookies are still hot, spread thinly with Vanilla Glaze.
- Makes about 3 1/2 dozen cookies.
