Italian Sausage Pie
- 2 pie crusts
- 1 c. Ricotta cheese
- 8 oz. finely diced Mozzarella cheese
- 3 oz. grated Romano cheese
- 2 eggs, beaten
- 2 links Italian sausage, remove casing after cooked
- 2 oz. diced Italian salami
- 1/3 tsp. each: dried oregano and basil leaves
- 1 clove garlic, minced
- 1/4 c. fresh chopped parsley (Italian if possible)
- Combine Ricotta, Mozzarella and Romano cheeses.
- Stir in eggs, cooked sausage, salami, oregano, basil, garlic and parsley.
- Place crust on a lightly oiled pie dish.
- Put all ingredients in pan on crust.
- Put top crust on, fit over filling, sealing edges.
- Brush with egg white.
- Bake at 350u0b0 for 30 to 35 minutes until golden. Cool about 10 minutes before serving.
