Vida'S Mock Ravioli(A Vegetarian Dish)
- 1 1/2 c. frozen spinach, thawed
- 1/4 c. olive oil
- 3/4 c. seasoned bread crumbs
- 1/2 c. parsley (double if using fresh)
- 1/4 c. grated Parmesan cheese
- 1 clove garlic, minced
- 1 tsp. salt
- 1 tsp. sage
- 1 pkg. lasagna strips, cooked
- 2 to 3 c. spaghetti sauce
- In a mixing bowl, mix together spinach, olive oil, bread crumbs, parsley, cheese, garlic, salt and sage.
- In a baking dish or casserole, place a layer of noodles on bottom.
- Top with a layer of spinach mixture and cover with a layer of spaghetti sauce.
- Repeat until dish is full with last layer of lasagna topped with sauce.
- Sprinkle lightly with Parmesan cheese.
- Bake at 325u0b0 for 35 to 45 minutes.
- Serves 4 to 6.
