Cream Of Broccoli Soup - Restaurant Style
- 4 cups chicken broth
- 1 (10 3/4 ounce) can cream of celery soup
- 1 (10 ounce) package frozen chopped broccoli
- 1/2 cup butter or 1/2 cup margarine
- 1 medium onion, chopped
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup shredded cheddar cheese
- Mix broth and soup in a large saucepan and bring to a boil.
- Add broccoli and reduce heat and simmer until broccoli is tender.
- Heat butter in a medium skillet and saute' onion for 5 minutes until tender.
- Add flour and cook for 1 minute longer.
- Gradually stir milk into skillet and stir continually until thickened.
- Add salt and pepper and mix well.
- Stir milk mixture into broccoli mixture and simmer over low heat stirring frequently for about 10 minutes.
- Ladle soup into serving bowl and top with cheddar.
