Cranberry Nut Bread
- 1/2 c. butter or margarine, at room temperature
- 3/4 c. granulated sugar
- 2 large eggs
- 2 c. all-purpose flour, sifted before measuring
- 2 3/4 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1 can (16 oz.) whole cranberry sauce
- 1/2 c. chopped nuts
- Heat oven to 350u0b0.
- Grease bottom and sides of a 9 x 5 x 3-inch loaf pan.
- In a medium-size bowl, beat butter until creamy.
- Beat in sugar until pale and fluffy.
- Add eggs, one at a time, beating well after each addition.
- In small bowl, mix flour, baking powder, cinnamon and salt; stir into butter mixture just until blended. Fold in cranberry sauce and nuts.
- Spoon into prepared pan and bake 50 to 60 minutes until pick inserted in center of bread comes out clean.
- Cool bread in pan 10 minutes; invert onto rack (or will make three 1-pound loaves).
- Makes great Christmas gifts.
