Diet Cinnamon-Raisin Yogurt Biscuits
- 1/4 c. sugar
- 1 tsp. cinnamon
- 2 c. flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/4 c. butter
- 1 (8 oz.) carton nonfat plain yogurt
- 1/2 c. raisins
- 1/2 c. powdered sugar
- 1 to 2 tsp. orange juice
- In a small bowl, stir together the sugar and cinnamon.
- In a large bowl, combine half the sugar-cinnamon mixture, flour, baking powder, baking soda and salt.
- Cut butter into flour mixture until it resembles coarse crumbs.
- Make a well in the center.
- Add yogurt and raisins all at once, stirring just until dough clings together.
- On a lightly floured surface, knead gently for 8 to 10 strokes.
- Roll or pat dough to 1/2-inch thickness.
- Cut with a 2 1/2-inch biscuit cutter, dipping the cutter into the flour between cuts.
- Place biscuits on an ungreased baking sheet.
- Sprinkle with the remaining sugar-cinnamon mixture.
- Bake at 450u0b0 for 10 to 12 minutes.
- Remove from baking sheet and cool slightly on wire racks.
- Stir together the powdered sugar and orange juice to make a drizzling consistency.
- Drizzle over each biscuit while it's warm.
- Serve warm.
- Makes 12 biscuits.
