Spinach Meatballs With Fresh Tomato Sauce
- 1/2 c. regular long grain rice
- 2 medium bunches spinach
- 1 large onion
- olive or salad oil
- 1 tsp. dried basil leaves
- 1/4 tsp. pepper
- salt
- 1 lb. ground beef
- 1 lb. ground turkey
- 2 Tbsp. grated Parmesan cheese
- 1 large egg
- 3 large tomatoes (about 1 3/4 lb.)
- 2 tsp. sugar
- 1/2 tsp. dried oregano leaves
- shaved Parmesan cheese (for garnish)
- One half hour before serving, in a 1-quart pan, prepare rice as label directs without adding butter.
- Set aside.
- Wash well and drain spinach. Remove and discard tough stem.
- Chop half the spinach and set remaining half aside.
- Chop onion.
