Chewy Chocolate Cookies
- 3 oz. (3 sq.) unsweetened chocolate
- 8 Tbsp. (1 stick or 1/2 c.) butter, softened
- 1 c. brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 2 tsp. powdered instant coffee
- 1 1/2 c. flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 c. (12 oz.) semi-sweet chocolate morsels
- Preheat oven to 350u0b0 and grease some cookie sheets.
- Melt the chocolate in a small cup or bowl set in a pan of simmering water, stirring until smooth.
- Set aside to cool.
- Cream the butter and sugar together, then add the eggs and beat until light and fluffy. Add the vanilla and powdered instant coffee; mix well.
- Beat in the melted chocolate.
- Stir and toss the flour, soda and salt together; add them to the chocolate mixture, beating until completely blended.
- Stir in the chocolate morsels.
- Drop dough on sheets 1 inch apart.
- Bake for 10 minutes or until tops look dry.
