Sweet-Sour Greens
- 1/2 lb greens; turnip, mustard or collard
- 2 slices bacon
- 4 tsp all-purpose flour
- 3/4 cup hot water
- 1 Tbsp sugar
- 1 Tbsp cider vinegar
- 1/4 tsp salt
- dash of pepper
- Discard stems of greens and any damaged portions.
- Thoroughly wash greens in cool water to remove dirt and sand particles.
- Cut or tear leaves into small pieces.
- In covered saucepan, cook greens in large amount of boiling salted water till tender, about 60 to 75 minutes.
- Drain well and rinse.
- In skillet, cook bacon until crisp.
- Remove bacon, reserving drippings in skillet. Crumble bacon and set aside.
- Blend flour into drippings.
- Add hot water; cook and stir till thickened and bubbly.
- Stir in sugar, cider vinegar, salt and pepper.
- Stir in drained, cooked greens; heat thoroughly.
- Garnish with crumbled bacon.
