Charlie'S Italian-Style Salmon Steaks
- 2 lb. salmon steaks
- 2 c. Italian dressing
- 2 Tbsp. lemon juice
- 2 tsp. salt
- 1/4 tsp. pepper
- paprika to taste
- parsley sprigs (for garnish)
- 2 lemons, cut into wedges
- Preheat broiler or heat coals in an outdoor grill.
- Place salmon steaks in single layer in a shallow baking dish.
- Combine Italian dressing, lemon juice, salt and pepper.
- Pour over salmon. Let salmon sit for 30 minutes, turning once. Drain salmon. Reserve marinade for basting.
- Place the salmon on a well-greased grill rack or broiler pan.
- Sprinkle with paprika.
- Cook about 4-inches from coals or broiler heat source for 8 minutes.
- Baste with marinade.
- Sprinkle with more paprika.
- Turn salmon over and cook for 7 to 10 minutes longer or until fish flakes easily when tested with a fork.
