Dark Fruit Cake
- 1 lb. butter
- 1 box brown sugar
- 1 c. molasses
- 1 tsp. molasses
- 1 tsp. soda (in molasses)
- 8 eggs, slightly beaten
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1 pt. fig preserves
- 1 pt. watermelon rind preserves
- 1 pt. candied cherries, chopped
- 1/2 pt. glazed pineapple, chopped
- 1 qt. nuts, chopped
- 1/2 pt. raisins
- 6 c. cake flour
- 1 tsp. baking powder
- Mix butter and sugar.
- Mix all fruit with all flour.
- Add the fruit and flour mixture to butter mixture.
- Add eggs, then add spices.
- Pour mixture into tube pans that have been greased and lined with brown paper.
- Garnish cakes before cooking with pineapple (glazed) and cherries (glazed).
- Cook about 2 1/2 to 3 hours at 250u0b0.
- Put pan of water under the cakes in the oven for moisture.
- Makes two cakes.
