Stuffed Manicotti Shells
- 1 (8 oz.) pkg. manicotti shells
- 1 small onion, chopped
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 1 Tbsp. instant chicken bouillon
- 1/2 tsp. garlic powder
- 1/8 tsp. dried thyme leaves
- 1 1/2 c. creamed cottage cheese
- 2 eggs
- 1/4 c. grated Parmesan cheese
- 1 (8 oz.) can tomato sauce
- 1 c. shredded Mozzarella cheese
- Cook manicotti shells as directed on package; drain.
- Mix onion, spinach, bouillon, garlic powder, thyme, cottage cheese, eggs and Parmesan cheese.
- Fill manicotti shells with spinach mixture; arrange in a greased oblong pan, 13 x 9-inches.
- Pour tomato sauce over manicotti; sprinkle with Mozzarella cheese. Cover and cook in a 350u0b0 oven until hot and bubbly, about 25 minutes.
- Serves 5.
