Microwave Chicken A La King
- 1/2 (10 3/4 oz.) can cream of mushroom soup (low-fat)
- 1/3 c. skim milk
- 1/4 c. frozen peas
- 2 Tbsp. chopped pimento
- 1 Tbsp. snipped fresh chives
- 6 oz. boneless chicken breast (skinless)
- 1 c. sliced mushrooms
- 1 c. broccoli flowerets
- 2 English muffins, split and toasted
- Cut boneless chicken into 1/2-inch cubes.
- In a dish, combine soup, milk, peas, pimento and chives.
- In a colander toss together chicken, mushrooms and broccoli.
- Place colander in a dish.
- Cover and cook on 100% power (High) for 6 to 8 minutes or until chicken is no longer pink and broccoli is tender.
- Stir chicken mixture once.
- Stir chicken mixture into soup mixture.
- Spoon over toasted muffins.
- Serves 2.
