Strawberry Delight
- 1 c. all-purpose flour
- 1/4 c. firmly packed brown sugar
- 1/2 c. chopped pecans
- 1/2 c. melted margarine
- 2 tsp. freshly squeezed lemon juice
- 1 c. sugar
- 1/2 pt. whipping cream or Cool Whip
- 2 egg whites
- 1 (10 oz.) pkg. frozen strawberries or 1 1/2 c. sliced fresh strawberries
- Combine flour, brown sugar, pecans and margarine.
- Bake at 350u0b0 for 20 minutes, stirring often.
- Let cool.
- Combine strawberries, sugar, lemon juice and egg whites; beat at high speed about 20 minutes or until fluffy.
- Fold whipped cream into strawberry mixture.
- Remove 1/3 of crumb mixture from pan.
- Pat remaining crumbs into smooth layer.
- Pour strawberry mixture over crumbs in pan and sprinkle reserved crumbs over top.
- Freeze. Yields 8 to 10 servings.
