Spinach Ranch Roll-Ups
- 1 (8 oz.) cream cheese
- 1 (8 oz.) carton sour cream
- 1/4 c. mayonnaise
- 1 pkg. Ranch-style dressing mix
- 1 bunch green onions, chopped
- 1 (10 oz.) pkg. frozen chopped spinach, cooled and squeezed dry
- 1 can sliced water chestnuts, drained and chopped
- 2 to 4 Tbsp. chopped canned jalapeno peppers
- 1/4 c. chopped pine nuts or pecans
- 1 doz. flour tortillas
- In food processor, mix cream cheese, sour cream, mayonnaise and package of dressing. Process until thoroughly mixed and creamy. Transfer to medium size bowl. Then add remaining ingredients, except tortillas. Mix well. Spread enough mixture on a tortilla to cover. Roll up in foil. Refrigerate for at least 4 hours. Remove foil. Slice (about 1/2-inch thick) and serve on small platter. You can also freeze these and thaw 2 hours before serving. Enjoy.
