Race Day Cake
- 3/4 c. boiling water
- 1/2 c. cocoa
- 1 3/4 c. sifted cake flour
- 1 3/4 c. sugar
- 1 1/2 tsp. salt
- 1/2 c. vegetable oil
- 7 unbeaten egg yolks
- 2 tsp. vanilla
- 1 c. egg whites (7 or 8)
- 1/2 tsp. cream of tartar
- Fluffy White Frosting
- 3 milk chocolate bars (1 oz. each), broken into squares
- Combine boiling water and cocoa; cool.
- Sift flour, sugar, soda and salt together into a bowl.
- Make a well and add vegetable oil, egg yolks, vanilla and cooled cocoa mixture.
- Beat until smooth with spoon, then measure egg whites and cream of tartar into large mixing bowl and beat until very stiff.
- Pour egg yolk mixture in thin stream over entire surface of beaten egg whites, gently cutting and folding in with rubber spatula until completely blended.
- Pour into ungreased 10-inch tube pan.
- Bake 55 minutes at 325u0b0 and then at 350u0b0 for 10 to 15 minutes or until cake tests done.
- Let hang over bottle neck until cold.
- Ice with Fluffy White Frosting.
