Moussaka

  1. Pare eggplant and slice 1/2-inch thick.
  2. Sprinkle with salt and set aside.
  3. Brown meat with onions and drain off fat.
  4. Add water, parsley, tomato paste, salt and pepper.
  5. Simmer until liquid is nearly gone.
  6. Cool and stir in half bread crumbs, 2 eggs, 1/4 cup cheese and cinnamon.
