Moussaka
- 2 medium egg plants
- 1 c. chopped onion
- 2 Tbsp. parsley
- 1 tsp. salt
- 1 slice bread, torn into crumbs
- dash of ground cinnamon
- milk and egg sauce
- 3 Tbsp. butter
- 1 1/2 c. milk
- dash of pepper
- 1 beaten egg
- 1 lb. ground meat
- 1/2 c. water
- 1 Tbsp. tomato paste
- dash of pepper
- 2 beaten eggs
- 1/4 c. shredded American cheese
- 3 Tbsp. plain flour
- 1/2 tsp. salt
- dash of ground nutmeg
- 1/4 c. shredded cheese
- Pare eggplant and slice 1/2-inch thick.
- Sprinkle with salt and set aside.
- Brown meat with onions and drain off fat.
- Add water, parsley, tomato paste, salt and pepper.
- Simmer until liquid is nearly gone.
- Cool and stir in half bread crumbs, 2 eggs, 1/4 cup cheese and cinnamon.
