Chow Mein Soft Noodles
- 2 lb. chow mein noodles*
- vegetable oil
- 1 lb. pork, sliced in bite sizes
- salt and pepper to taste
- 1 c. water (1/2 c. if using canned bean sprouts)
- 1/2 medium onion, sliced
- 1 stalk celery, sliced
- 1 (5 oz.) can sliced water chestnuts
- 1 (5 oz.) can sliced bamboo shoots
- 1 small can mushrooms or 3 large Japanese mushrooms (shiitake), soaked overnight and sliced in narrow strips
- 1 lb. fresh bean sprouts or 2 cans canned bean sprouts, well rinsed and drained
- 1 tsp. sugar
- 2 tsp. vinegar
- 2 Tbsp. soy sauce
- 1 tsp. m.s.g.
- 2 Tbsp. cornstarch
- Fry noodles
- in skillet with enough oil to cover bottom of skillet.
- Lightly
- brown,
- flipping over to brown the other side. Place
- on
- platter.
- Fry
- pork
- in dash of oil.
- Season with
- salt and
- pepper.
- When nearly done, add vegetables and water.teason with sugar, vinegar, soy sauce and m.s.g.
- Cook just
- enough
- to heat through the vegetables, do not overcook. Thicken
- with diluted
- cornstarch;
- mix and pile mixture onto noodles.
- Serves 4 generously!
