Beef Kabobs
- 1/3 Cup olive oil
- 2 cloves garlic, chopped
- Grated rind, juice of 1 lemon
- 2 Tbsp. red-wine vinegar
- 1 tsp. dried oregano
- 1 tsp. Salt
- 1/4 tsp. Black pepper
- 2 lbs. Boneless sirloin, cut into 2-inch pieces
- 2 sweet green peppers cut into 1-inch pieces
- 2 red onions cut into 3/4-inch wedges
- 1 pkg. (10 oz.) white mushrooms
- 2 boxes (6.9 oz. Each) rice pilaf mix, prepared
- In small bowl, whisk oil, garlic, rind and juice, vinegar, oregano, salt and pepper. Pour half into large storage bag; add beef. Seal; refrigerate 1 to 2 hours. Divide steak, peppers, onion and mushrooms into 6 equal portions. Thread each portion onto large metal skewers. Heat broiler. Place skewers on large broiler-pan rack. Brush with some of remaining marinade. Broil 5 minutes. Turn over; brush with remaining marinade. Broil 5 minutes. Serve with rice.
