Healthy Potato Skins
- 4 tsp. nonfat "butter" granules
- 6 medium baking potatoes, scrubbed and baked
- 1/2 tsp. garlic powder
- freshly ground black pepper to taste
- Preheat oven to 450u0b0.
- Reconstitute the "butter" granules according to the directions on the package.
- Cut each potato in half.
- Scoop out the center, leaving about 1/4-inch of potato on the inside of each skin.
- (Use leftover potato to make Shepherd's Pie.)
- Cut skins into quarters.
- Dab liquid butter substitute onto the white side of each potato skin.
- Sprinkle with garlic powder and pepper, if desired.
- Place prepared skins, skin side down, on a baking sheet.
- Bake 15 minutes or until lightly browned.
- Turn skins over and bake another 5 minutes or until crisp.
- Serve immediately.
- Serves 12; 4 per serving.
