Rice Sausage Casserole
- 1 box Uncle Ben's wild rice
- 1 lb. hot sausage
- 1 medium onion, finely chopped
- 1 clove garlic, crushed
- 2 cans cream of mushroom soup
- 1 small jar pimentos, chopped
- 1 can water chestnuts, drained and sliced thin
- 1/2 c. slivered almonds
- 1/2 stick butter
- 1/4 lb. Ritz crackers
- 1 stick butter, melted
- Cook rice according to directions on box.
- Brown almonds in 1/2 stick butter.
- Brown together sausage, onion and garlic.
- Mix rice and sausage, while hot, with other ingredients, except crackers and 1 stick of butter.
- Place in a 2-quart casserole dish.
- Crush Ritz crackers.
- Toss with 1 stick melted butter. Sprinkle over top.
- Bake for 25 to 30 minutes at 350u0b0 until bubbly and crackers are browned.
