Winter Warm-Up Beef Simmer
- 1 c. (2 medium) onions
- 3 lb. beef chuck roast, cut/trimmed to 2 1/2-inch pieces
- 3 medium carrots, cut in 1-inch pieces
- 8 oz. pkg. mushrooms, halved
- 1 c. apple juice
- 6 oz. can tomato paste
- 1/2 tsp. pepper
- 1 tsp. minced fresh garlic
- 6 slices bacon, cut up in 1/2-inch pieces
- 8 medium red potatoes, halved
- 3 medium onions, halved
- 1/2 c. chopped parsley
- 10 1/2 oz. can beef broth
- 1/2 tsp. salt
- 1/2 tsp. thyme leaves
- 2 bay leaves
- Heat oven to 325u0b0.
- Place onions, bacon and beef in Dutch oven.
- Cook over medium-high heat, stirring occasionally, until bacon and roast are browned (8 to 10 minutes).
- Stir in vegetables.
- Stir in remaining ingredients.
- Cover and bake for 1 1/2 hours.
- Uncover; continue baking (stir occasionally) for
- 2 to 2 1/2 hours or until beef is fork-tender.
