Greek Salad Supper

  1. Mix potatoes, parsley, onion, cider vinegar, oil, salt and pepper.
  2. Chill until ready to serve.
  3. Put on a bed of lettuce.
  4. Mound potato mixture in center.
  5. Arrange around potatoes: tomato wedges, artichokes, cucumber spears, green onion rings, red onion, pitted black olives, diced Feta cheese, shrimp and radishes.
  6. Serves 6.
