Mccormack'S Choice Casserole
- 8 oz. dry noodles
- 1 (10 oz.) pkg. chopped frozen broccoli
- 16 oz. creamed cottage cheese
- 1 egg
- 2 (2 1/2 lb.) chickens
- 6 c. water
- 1 celery stalk
- 1 carrot
- 1 onion
- 1 tsp. salt
- 1/2 c. oleo
- 1/2 c. flour
- 1 1/2 tsp. salt
- 3/4 tsp. dried basil
- 1/2 tsp. pepper
- Cook noodles for 8 minutes; drain.
- Cook broccoli; drain.
- Mix cottage cheese with egg.
- Prepare chickens in 6 cups water with celery, carrot, onion and 1 teaspoon salt.
- Remove meat; save broth.
- For gravy mix oleo and flour.
- Cook to smooth paste.
- Add 1 1/2 teaspoons salt, basil and pepper.
- Cook 1 minute.
- Slowly add 3 cups chicken broth, stirring until it comes to a boil.
- Add other ingredients.
