Red Beans And Rice
- 4 c. dry red beans
- 2 Tbsp. bacon fat
- 1 medium onion, chopped
- 2 c. (16 oz.) canned tomato sauce
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 Tbsp. vinegar
- 1 tsp. Tabasco sauce
- 1 tsp. crushed red pepper flakes
- 1/4 tsp. thyme
- 1 1/2 to 2 lb. meaty ham hocks
- 3 c. cooked rice
- 1/4 c. chopped onion
- 1/2 lb. sausage, cooked and sliced into 1-inch rounds
- Clean and wash beans.
- Soak overnight.
- Drain water.
- In a heavy pot, heat the bacon fat.
- Saute onions until wilted.
- Add beans, tomato sauce, salt, pepper, vinegar, Tabasco sauce, red pepper and thyme.
- Add enough water to cover beans.
- Simmer until beans are semi-cooked, about 30 minutes.
- Remove 1 cup of beans, drain and mash or blend.
- Return to pot along with ham hocks and cover/cook on low for 2 hours.
