Red Beans And Rice

  1. Clean and wash beans.
  2. Soak overnight.
  3. Drain water.
  4. In a heavy pot, heat the bacon fat.
  5. Saute onions until wilted.
  6. Add beans, tomato sauce, salt, pepper, vinegar, Tabasco sauce, red pepper and thyme.
  7. Add enough water to cover beans.
  8. Simmer until beans are semi-cooked, about 30 minutes.
  9. Remove 1 cup of beans, drain and mash or blend.
  10. Return to pot along with ham hocks and cover/cook on low for 2 hours.
