Christmas Rainbow Cake

  1. Prepare cake mix as directed on cake box, baking in 2 (8 or 9-inch) pans.
  2. Cool.
  3. Place layers, top side up, in 2 clean layer pans.
  4. Prick each cake with utility fork at 1/2-inch intervals. Dissolve each gelatin separately in 1 cup boiling water; carefully spoon each over one of the cake layers.
  5. Chill 3 to 4 hours.
  6. Dip one cake pan in warm water for 10 seconds.
  7. Turn onto serving plate.
  8. Top with 1/2 cup of the whipped cream.
  9. Unmold second layer; place carefully on top of first layer.
  10. Frost top and sides with remaining cream; chill.
  11. Garnish with flattened gumdrops, cut to resemble holly leaves, if desired.
